Chocolate Peanut Butter Reese's Baked Oats (Vegan)

If you love Reese's peanut butter cups, you're going to adore these Reese's baked oats.

Just like the candy, these oats are chocolatey on the outside, and full of peanut butter on the inside. While they feel like a dessert for breakfast, they're actually a high-protein option at 23g. Depending on your health goals, these may be a great choice!

How Do You Make These Reese's Baked Oats?

While it may sound complicated, this recipe is actually very easy. You pretty much throw everything in a blender, add your toppings and let them bake. The hardest part is waiting for them to cook, I promise.

Substitutions

I've made my oats vegan and high-protein, but I understand that you might be after something different. While I can't list substitutions for everything, here are some basic swaps that will work here.

  • Egg replacer: My choice is this  egg replacer. If you don't have/ don't want to use that, you can also use a regular egg or  flax egg instead.
  • Banana: Don't like banana? Switch it out for yogurt (coconut or greek work best).
  • Vegan protein powder: If you don't have protein powder, it's alright to skip it. Instead use either powdered peanut butter, or add 2 tablespoon extra oats to the blender.
  • Maple syrup: Any sweetener works. Depending on your protein powder, you may not need any.
  • Soy milk: Use any milk you like best. It should do the trick just as well.

Can I Prep Baked Oats The Night Before?

If you don't want to use a blender in the morning, I get it. Good news: you can 100% prep baked oats the night before.

If you're planning to prep them in advance, follow these steps:

  • Blend the oats the night before and set aside.
  • In the morning, first mash the banana in a bowl. Add blender ingredients to bowl, and stir.
  • Now, fill the ramekin and bake the oats according to the recipe instructions.

Easy as that!

Description

These vegan Reese's-inspired chocolate peanut butter baked oats, are an upgrade of the famous TikTok recipe for baked oats. You'll feel like you're eating a treat for breakfast!


Ingredients

Scale
  • 1 egg replacer or flax egg (*see suggestions above)
  • ½ banana (super ripe)
  • ½ cup oats (rolled)
  • 2 tbsp vegan protein powder (chocolate)
  • 1 tsp maple syrup (optional)
  • ¼ cup soy milk
  • ¼ tsp baking powder
  • ¼ tsp sea salt
  • 1 Tbsp peanut butter
  • 1 tsp chocolate chips


Instructions

  1. Preheat Oven Preheat oven to 180°C.
  2. Blend Ingredients In a blender, mix all ingredients except peanut butter and chocolate chips. Blend until everything is smooth and well-combined.
  3. Bake Pour ¾ of the blended mixture into a small, oven-proof ramekin (greased). Add peanut butter to centre, and cover with the remaining ¼ batter. Top with chocolate chips Bake in the oven until cooked through, 25 minutes.
  4. Let cool and eat The ramekin will be hot, so use an oven mitt to take your baked oats out of the oven. Let them cool slightly, then eat and enjoy!

    Was it chocolate protein powder? I guess that's what you used? Anyway, i added some extra cacao. They turned out well.

      Hi Cynthia. Yeah, I used chocolate protein powder. You could also add some coca alongside a different flavoured protein (about 1 Tbsp) or swap the protein powder for coca instead.
