Description

These baked oats are so similar to birthday cake, you'll feel like you're eating a treat for brekkie.


Ingredients

Scale
  • 1 egg replacer or flax egg (*see suggestions)
  • ½ banana (ripe)
  • ½ cup oats (rolled)
  • 1-2 tsp maple syrup
  • ¼ Cup dairy free milk
  • 2 Tbsp vegan protein powder (vanilla flavour)
  • ½ tsp almond extract
  • ¼ tsp baking powder
  • 1 pinch sea salt
  • 1-2 Tbsp coconut yogurt
  • 1 Tbsp coloured sprinkles (for topping (optional))

Instructions

  1. Preheat Preheat oven to 180°C.
  2. Blend In a blender, mix all ingredients except coconut yogurt and sprinkles. Blend until everything is smooth and well-combined.
  3. Bake Pour ¾ of the blended mixture into a small, oven-proof ramekin (greased). Dollop the coconut yogurt in the centre and top with the remaining batter. Top with coloured sprinkles. Bake in the oven until cooked through, 25 minutes.
  4. Eat and Enjoy The ramekin will be hot, so use an oven mitt to take your baked oats out of the oven. Let them cool slightly, then eat and enjoy!
