Oatmeal Raisin Chocolate Chip Cookies

Description

These oatmeal raisin chocolate chip cookies are everything you want from a cookie. Chewy, sweet, and studded with juicy raisins and dark chocolate chips. Like a classic old fashioned oatmeal cookie, but levelled up.


Ingredients

Dry Ingredients

  • 150 grams old fashioned oats ((1 cup))
  • 70 grams almond meal ((3/4 cup))
  • 50 grams oat flour (or oats, blended into a fine powder (1/2 cup))
  • 32 grams all purpose flour ((1/4 cup))
  • 3 tablespoons coconut sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 pinch sea salt

Wet Ingredients

  • 7 Tablespoons maple syrup ((1/3 cup + 2 Tablespoons))
  • 1/4 cup coconut oil (liquid)

Other Ingredients

  • 50 grams raisins
  • 50 grams dark chocolate chips

Instructions

  1. Preheat oven to 180°C (350°F). Line a large baking tray with baking paper.
  2. In a large bowl mix oats, almond meal, oat flour, all purpose flour, coconut sugar, baking powder, cinnamon and sea salt until well-combined. If you don't have oat flour, you can easily make it by pulsing oats in a blender or food processor until they become powder.
  3. Once dry ingredients are mixed, add all wet ingredients and stir to combine. The dough will be thick and sticky.
  4. Finally, add raisins and chocolate chips. Mix until well incorporated.
  5. Cover the bowl with foil or cling wrap, and refrigerate for 30 minutes to make the dough easier to handle.
  6. Once 30 minutes have passed, use an ice cream scoop to form balls of dough about 2 tablespoons big. Plop the dough onto the baking tray, this should make about 12-14 cookies.
  7. Using the palm of your hand, carefully press down on the dough balls to flatten slightly.
  8. Bake for 10-15 minutes until the bottom edges are golden.
  9. The cookies are fragile when first baked, so use a spatula to carefully transfer them to a cooling rack to cool completely before eating. They will firm up as they cool.
  10. Enjoy alone or with a warm drink. I love these alongside black coffee or some Earl Grey!
  11. Store cookies in an airtight container and eat within 3-5 days.
