Pumpkin White Bean Dip

Description

Creamy, flavourful, and healthy. This pumpkin white bean dip has it all! Though the recipe is simple, the final product is out-of-this-world delicious. Think of it as hummus’ more eccentric autumnal cousin.


Ingredients

  • 1 can butter beans (drained and rinsed)
  • 1 clove garlic
  • 1/4 cup pumpkin puree
  • 3 tablespoons olive oil (extra virgin)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • parsley (for garnish)

Instructions

  1. Drain and rinse butter beans. Chop garlic, and set aside.
  2. In a high-speed blender or food processor, blend all ingredients except parsley until smooth.
  3. Transfer the dip into a serving dish, and top with chopped parsley and an extra drizzle of olive oil.
  4. Serve alongside pita chips, chopped veggies, or crackers. This is also great spread on sandwiches. The dip will stay good for up to a week when stored in an airtight container in the fridge.
