Stir-Fried Curry Udon Recipe for One

Description

This curry udon recipe is a great quick dinner. Stir-fried udon noodles with creamy curry make a delicious healthy meal for one. 


Ingredients

Units Scale
  • 1-2 tablespoons oil (we used peanut oil)
  • 1 small onion, sliced
  • 1 small carrot, sliced
  • 1 sprig of scallion, sliced
  • Half of 1 large Japanese curry cube (30g)
  • 3/4 cup (180ml) water
  • 200g cooked udon noodles
  • 80g tofu, sliced
  • Optional: dash of sugar if you like it sweeter or soy sauce if you like it more salty

Instructions

  1. In a fry-pan, heat the oil over medium-high heat.
  2. Once oil is warm, reduce heat slightly and sautée the onion, carrot and scallions for 2-3 minutes over medium heat.
  3. Add in one of the Japanese curry brick and water.*
  4. Add in the udon noodles and tofu. Break up the udon noodles and continue cooking & stirring for 6-8 more minutes until it is all coated in the sauce
  5. Enjoy warm!

Notes

*Optional: you can also add some sugar if you like a sweeter sauce or soy sauce if you prefer it more salty
