Description
This curry udon recipe is a great quick dinner. Stir-fried udon noodles with creamy curry make a delicious healthy meal for one.

- 1-2 tablespoons oil (we used peanut oil)
- 1 small onion, sliced
- 1 small carrot, sliced
- 1 sprig of scallion, sliced
- Half of 1 large Japanese curry cube (30g)
- 3/4 cup (180ml) water
- 200g cooked udon noodles
- 80g tofu, sliced
- Optional: dash of sugar if you like it sweeter or soy sauce if you like it more salty
Instructions
- In a fry-pan, heat the oil over medium-high heat.
- Once oil is warm, reduce heat slightly and sautée the onion, carrot and scallions for 2-3 minutes over medium heat.
- Add in one of the Japanese curry brick and water.*
- Add in the udon noodles and tofu. Break up the udon noodles and continue cooking & stirring for 6-8 more minutes until it is all coated in the sauce
- Enjoy warm!
Notes
*Optional: you can also add some sugar if you like a sweeter sauce or soy sauce if you prefer it more salty
