Description
There are so many uses for this delicious peach syrup. Whether you use it in cocktails or drizzled over dessert, it'll add a hint of summer!

- 1 cup raw cane sugar
- 1 cup room temperature water
- 2-3 cups chopped peaches
Instructions
- In a medium saucepan, combine 1 cup of sugar and 1 cup of water.
- Heat over medium heat, and stir frequently until sugar dissolves.
- Add 2-3 cups of diced peaches. The less ripe the peaches, the more you'll want to use to achieve a strong peach flavour.
- Reduce heat to low and simmer the peach mixture for 5 minutes (or up to 10 minutes for a thicker syrup).
- Remove the saucepan from heat, then blend the cooked peaches and simple syrup with an immersion blender.
- Use a fine mesh strainer to separate the pulp from the syrup. (Psst . . . save the pulp to use in ice cream sundaes).
- Allow the syrup to cool before using.
- Store leftover syrup in an airtight container, jar or bottle in the refrigerator for up to one week.
