🍑 Ingredients and Substitutions
The beauty of this recipe lies in its simple ingredients. With just 2 ingredients (3 if you include water), you can turn fresh summer peaches into a gorgeous homemade fruit syrup.
To make, it you'll need:
- Fresh peaches: Any peach variety will work, but we recommend choosing fresh over frozen or canned for this recipe. This is a great way to use up any leftover peaches you might have from baking pies or crumbles.
- Raw sugar: We love using raw sugar in this recipe, as it results in a richer cane sugar syrup. Because raw sugar is less refined than white table sugar, it has a complexity that gives syrups a little something special. You can swap this out for white sugar if you'd prefer, or brown sugar for a more caramelised flavour.
- Water: Water is the basis of this syrup, so use whatever water you typically drink.
📋 Instructions
- In a medium saucepan, combine 1 cup of sugar and 1 cup of water.
- Heat over medium heat, and stir frequently until sugar dissolves.
- Add 2-3 cups of diced peaches. The less ripe the peaches, the more you'll want to use to achieve a strong peach flavour.
- Reduce the heat to low, and simmer the mixture for 5 minutes (or up to 10 minutes for a thicker syrup).
- Remove the saucepan from heat, then blend the cooked peaches and simple syrup with an immersion blender.
- Use a fine mesh strainer to separate the pulp from the syrup. (Psst . . . save the pulp to use in ice cream sundaes).
- Allow the syrup to cool before using.
- Store leftover syrup in an airtight jar or bottle in the refrigerator for up to one week.
💡 Top Tip
When cooking the peaches in the syrup, avoid boiling. You want to keep the mix at a gentle simmer, with only small bubbles rising to the surface. This will help infuse the mixture with rich peach flavour without risking burning the sugar or thickening the syrup too much.
🤝 Serving Suggestions
There are so many ways to use your homemade syrup this peach season!
- In your favourite drinks: Use this peach syrup in iced tea, cocktails or lemonade. You can also freeze it in ice cube trays for flavour-packed cubes that will keep your drinks cold.
- Served with desserts: Use this syrup to moisten layer cakes, drizzle it over vanilla ice cream or swirl it through homemade custard for a peachy flavour.
- With breakfast foods: Swap traditional pancake syrup for peach syrup the next time you serve pancakes or french toast. A little bit of peach syrup can also sweeten your favourite oatmeal, overnight oats, chia pudding or yogurt bowls.
