If you can't find fresh strawberries, you can also use frozen ones, though you will use a bit of the sweetness. In a pinch, you can also use strawberry syrup but beware it will be a lot sweeter, so you may want to adjust the simple syrup accordingly.

Ingredients
- 2 large lime, cut into quarters
- 1 bunch mint leaves
- 8 strawberries, sliced
- 1 cup simple syrup or sweetener*
- 2 cups soda water
- Ice cubes
Instructions
- To make four mocktails, start by getting out four tall glasses (Collins glass or highball glass recommended)
- Into each glass, place two lime slices, strawberry slices equivalent to two strawberries, 4-5 mint leaves, and 2 tablespoon simple syrup.
- Muddle the lime, mint, strawberries and sweetener by smooshing them against the bottom of the glass with a muddler (or the end of a wooden spoon).
- Add ice cubes to the glass, filling it almost to the top.
- Top up your drink with soda water.
- Garnish the drink with a mint sprig and add a slice of lime to the rim of the glass if you'd like, for an extra touch.
