These strawberry cheesecake overnight oats really do taste like dessert. On top of that, they’re super simple to make and a great healthy breakfast. (Psst. . . they’re also vegan!)

- 1/2 cup oats
- 1/2 cup soy milk (or any alternative)
- 1/4 cup plant based yogurt
- 1 Tablespoon granulated monk fruit (or other sweetener (sugar, maple, honey etc.)
- 1/2 Tablespoon chia seeds
- 1 teaspoon vanilla
- 1 pinch sea salt
- 1 Tablespoon 3 Ingredient Strawberry Chia Jam
- 1 Biscoff cookie (crumbled)
Instructions
- Mix everything in a small bowl or jar.
- Cover and refrigerate overnight, or at least 45 minutes.
- Now your overnight oats are ready to eat and enjoy!
