Description
This is a "black forest" take on one of my favourite breakfasts: Baked oats. Perfect for when you're craving something sweet and chocolatey to start the day.
Ingredients

- 1 egg replacer/ egg/ flax egg (*see suggestions above)
- ½ banana (super ripe)
- ½ Cup oats (rolled)
- ¼ Cup soy milk
- 2 Tbsp cacao powder
- 1 Tbsp maple syrup (or sweetener of choice)
- ¼ tsp baking powder
- 1 pinch sea salt
- 1 Tbsp cherry jam
- 5 pitted cherries for topping ((optional))
Instructions
- Preheat Preheat oven to 180°C.
- Blend In a blender, mix all ingredients except cherry jam and cherries if using. Blend until everything is smooth and well-combined.
- Bake Pour ¾ of blended mixture into a small, oven-proof ramekin (greased). Add the cherry jam, and pour remaining ¼ batter on top. Top with fresh or frozen pitted cherries if using. Bake in the oven until cooked through, 25 minutes.
- Enjoy The ramekin will be hot, so use an oven mitt to take your baked oats out of the oven. Let them cool slightly, then eat and enjoy!
