Black Forest Baked Oats

Description

This is a "black forest" take on one of my favourite breakfasts: Baked oats. Perfect for when you're craving something sweet and chocolatey to start the day.


Ingredients

Scale
  • 1 egg replacer/ egg/ flax egg (*see suggestions above)
  • ½ banana (super ripe)
  • ½ Cup oats (rolled)
  • ¼ Cup soy milk
  • 2 Tbsp cacao powder
  • 1 Tbsp maple syrup (or sweetener of choice)
  • ¼ tsp baking powder
  • 1 pinch sea salt
  • 1 Tbsp cherry jam
  • 5 pitted cherries for topping ((optional))


Instructions

  1. Preheat Preheat oven to 180°C.
  2. Blend In a blender, mix all ingredients except cherry jam and cherries if using. Blend until everything is smooth and well-combined.
  3. Bake Pour ¾ of blended mixture into a small, oven-proof ramekin (greased). Add the cherry jam, and pour remaining ¼ batter on top. Top with fresh or frozen pitted cherries if using. Bake in the oven until cooked through, 25 minutes.
  4. Enjoy The ramekin will be hot, so use an oven mitt to take your baked oats out of the oven. Let them cool slightly, then eat and enjoy!
