Vegan Eggnog Pudding

Description

This vegan eggnog pudding is the perfect Christmas dessert. Slightly spiced, sweet and creamy it tastes just like eggnog in pudding form!


Ingredients

Units Scale
  • 300 grams silken tofu (extra liquid drained)
  • 50 grams prepared custard ((make it with soy milk if vegan))
  • 4 tablespoon sweetener of choice
  • 1/4 teaspoon nutmeg (ground)

Instructions

  1. Using store-bought custard powder, prepare 1 cup of custard with soy milk. (You'll have a little bit extra, which you can store in the fridge and eat later.)
  2. Put the custard in the fridge until it is slightly cooled, about 10 minutes.
  3. In a blender, combine 50 grams of the prepared custard, tofu, sweetener and nutmeg. Blend until smooth.
  4. Divide mix into two containers and refrigerate overnight or at least 3 hours until cooled and slightly thickened.
  5. Before serving, top with a sprinkle of nutmeg.
