The Best Pumpkin Overnight Oats (Vegan Option)

These pumpkin overnight oats are delicious! Easily made vegan, this is the perfect breakfast meal prep you can make in the evening and enjoy the next morning.


  • 1/2 cup rolled oats
  • 1/2 cup of any type of milk
  • 1/4 cup pumpkin puree
  • 1 tablespoon maple syrup (or other sweetener)
  • 1/2 tablespoon chia seeds
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice (or cinnamon)
  • 1 pinch of sea salt
  • Nuts/seeds/nut butter, for topping (optional)


  1. Mix all ingredients except the optional toppings in a small bowl. Cover the bowl with foil or transfer the oats to an airtight container, and refrigerate overnight or at least 4 hours.
  2. In the morning, remove oats from the fridge, top them with your favourite toppings, and enjoy!
