Description
These pumpkin overnight oats are delicious! Easily made vegan, this is the perfect breakfast meal prep you can make in the evening and enjoy the next morning.
Ingredients
Scale
- 1/2 cup rolled oats
- 1/2 cup of any type of milk
- 1/4 cup pumpkin puree
- 1 tablespoon maple syrup (or other sweetener)
- 1/2 tablespoon chia seeds
- 1 teaspoon vanilla extract
- 1/2 teaspoon pumpkin pie spice (or cinnamon)
- 1 pinch of sea salt
- Nuts/seeds/nut butter, for topping (optional)
Instructions
- Mix all ingredients except the optional toppings in a small bowl. Cover the bowl with foil or transfer the oats to an airtight container, and refrigerate overnight or at least 4 hours.
- In the morning, remove oats from the fridge, top them with your favourite toppings, and enjoy!
Notes
Note: to make your own pumpkin puree, steam fresh or frozen pumpkin until soft, then blend. See full instructions under the 'making your own pumpkin puree' heading of this recipe.
