  • Be mindful about which protein powder you use, as it will impact the flavour of your cookie dough cups. Michelle suggests using Macro Mike's cookie dough flavoured protein which will give these treats an even stronger chocolate chip cookie flavour. Vanilla or caramel flavour would also work well!
  • Don't forget to thaw! These are best if you let them thaw for about a minute before digging in. Eating these cookie cups too soon might mean they're a bit harder, but they'd still be delicious.

Ingredients and Substitutions 

  • Banana: The riper the better!
  • Protein powder: As-written, this recipe uses vegan protein powder. If you're not vegan, you could also use whey protein. We recommend sticking with a cookie, vanilla or caramel flavoured protein for best results.
  • Chocolate chips: As-written, this recipe uses dairy-free chocolate chips. If you eat dairy, you could also swap these out for regular chocolate chips.

Description

Ingredients

Units Scale
  • 1 large ripe banana, peeled
  • 100g vegan protein powder (Michelle uses @macr0mike cookie dough flavour. Use her discount code: amb-chen)
  • 25g dairy-free chocolate chips
Topping
  • 1 tablespoon vegan protein powder
  • 60g dairy-free chocolate chips, melted

Instructions

  1. Line 3 cups in a cupcake tin with liners. Alternatively, use a silicone mould without liners.
  2. Using a fork, mash the peeled bananas in a large bowl very well until puréed
  3. Continuing to mash, add in the protein powder. Keep mashing the protein and banana together until a smooth cookie dough forms
  4. Fold through the chocolate chips.
  5. Divide the mixture between the 3 lined cupcake tin cups.
  6. Freeze for 2 hours until firm
  7. Once the cookie dough cups are frozen, start making the topping by melting the chocolate in the microwave.
  8. Mix in the protein powder for the topping into the melted chocolate.
  9. Drizzle an even amount of chocolate over each cookie dough cup.
  10. Return to the freezer for 15 mins.

*Storage tip: Store these in an airtight container in the freezer and let them thaw for a minute before serving.
