This caramel latte overnight Weetabix is THE BEST! With a coffee-Weetabix base, and salted caramel yoghurt on top, it’s a delicious, healthy and high-protein breakfast! Plus, it tastes like eating caramel cheesecake for breakfast — what more could you want?

Overnight Weetabix is definitely a game-changer when it comes to make-ahead breakfast. While it’s as easy to make as — say — a yoghurt parfait, it’s an entirely different vibe. 

Made from layers of Weetabix, yoghurt, and whatever toppings you desire, it’s a fun and nutritious way to eat your Weetabix in the morning. Best of all, you prepare this brekkie the night before, making it a super easy and quick option for healthy eaters on the go.

Where Can I Buy Weetabix (or Weet-Bix)

If you live in the UK, you’ll be able to find Weetabix at any normal grocery store. The same goes for Australia, where you’re sure to find the Aussie version, Weet-Bix lining the shelves of the cereal aisle. 

Some Australian and UK stores even have their commonwealth counterparts in the international foods section, but you might have to do some searching if you’re after the version that’s not available in your country. 

In the United States, Weetabix is a little bit harder to find. But never fear: It’s definitely not impossible! 

While the British cereal isn’t in every grocery store, you might be surprised at how many retailers actually carry it. To find a store near you, you can enter your location into the Weetabix USA website. If there’s nothing nearby, you can always order online from there to have your Weetabix delivered. 

Pro Tip: Trader Joe’s and Walmart have both sold Weetabix at various times, so if you’re on the hunt for some shredded wheat, try starting there!

FAQ

Is Weetabix high in protein?

As far as breakfast cereals go, Weetabix is pretty average in the amount of protein per serve. However, when you combine Weetabix with Greek yogurt, the protein count skyrockets to xg in this recipe.

Can I use Weetabix instead of oats in other recipes?

If you’re looking to adapt your favourite overnight oats recipe to become overnight Weetabix, it’s definitely possible. If you want to keep your overnight Weetabix layered, simply crush the Weetabix in a bowl, and add the liquid before layering up with any yoghurt, seeds or fruit.

Description

This caramel latte overnight Weetabix is THE BEST! With a coffee-Weetabix base, and salted caramel yoghurt on top, it’s a delicious, healthy and high-protein breakfast! Plus, it tastes like eating caramel cheesecake for breakfast — what more could you want?


Ingredients

Units Scale
  • 2 blocks Weetabix (crushed)
  • ½ cup brewed coffee
  • 2-3 drops liquid stevia (preferably caramel flavour)
  • 170 grams Greek yoghurt (salted caramel flavour)
  • 2-3 coffee beans (for topping)

Instructions

  1. Crush Weetabix and place in the medium sized bowl.
  2. Pour coffee over the crushed Weetabix, and let it set for a few minutes.
  3. Once the Weetabix have soaked up some of the liquid (2-3 minutes), use the back of a spoon to spread and smooth the mixture into an even layer.
  4. Drop the stevia on top of the Weetabix layer if using.
  5. Pour the Greek yoghurt mixture over the Weetabix base. Use a spoon to gently spread the yoghurt into an even layer.
  6. Cover the bowl of overnight Weetabix with foil or plastic wrap and rest in the fridge overnight.
  7. Refrigerate for at least 4 hours to allow everything to chill and set.
  8. When ready to eat, remove from the fridge, top with coffee beans for decoration, and dig in! These overnight Weetabix will keep covered in the fridge for up to three days.
