This version of overnight Weetabix incorporates cinnamon-coated apples for an apple pie flavour you'll adore. It's super simple to make the night before and enjoy as a grab-and-go breakfast in the morning.

So by now it's no secret that overnight Weetabix is a wonderful breakfast option. And if you've been having this simple brekkie on rotation, you're definitely not alone. The hashtag #overnightweetabix already has nearly 3,000 photos tagged on Instagram, and that's just the tip of the iceberg. The breakfast phenomenon has made its rounds on TikTok and even scored a write-up on Delish. 

But while we're obviously all enjoying the concept, one thing is clear: We need more options. 

You probably don't want to have the EXACT same thing every day, and that's where the exploration of new flavours comes into play. 

Enter: Apple pie. Sweet, cinnamon-y, the perfect pair to creamy Greek yoghurt. It would be a huge oversight to not develop an apple pie iteration of overnight Weetabix. 

So - here it is!

What kind of apples should I use in this apple pie overnight Weetbix recipe?

The apples in this apple pie Weetabix enter the scene as a topping, so it really doesn't matter what kind you choose. If you love the tangy, sour flavour of Granny Smith apples in pie, reach for that! If you prefer an apple that's crisp and sweet, choose something like Pink Lady or Kanzi. 
The possibilities are endless, so choose whatever apple you typically like best. 

Do I need a microwave to make apple pie overnight Weetabix?

While this recipe suggests making the apple topping in the microwave, you can also make it in a small saucepan. 
Instead of putting sliced apples, maple syrup and cinnamon in a mug to microwave, place them instead in a small pot. Cook the mixture over medium-low heat for 5- minutes until the apples are soft and the liquid thick and saucy. 

Can apple pie overnight Weetabix be made gluten-free?

Absolutely! To make this recipe gluten-free-friendly, choose a gluten-free option over traditional Weetabix. In the UK, your best bet is Nutribix. In Australia, simply go for gluten-free Weet-Bix. The rest of the recipe can be made the same way.

Description

This version of overnight Weetabix incorporates cinnamon-coated apples for an apple pie flavour you'll adore. It's super simple to make the night before and enjoy as a grab-and-go breakfast in the morning.


Ingredients

Units Scale

Overnight Weetabix

  • 2 blocks Weetabix (crushed)
  • ½ cup almond milk (or milk of choice)
  • 100 - 170 grams Greek yoghurt (plain or vanilla)

Apple Pie Topping

  • ½ medium apple (sliced)
  • 1 tablespoon maple syrup
  • ½ teaspoon cinnamon
  • 1 pinch sea salt

Instructions

  1. Crush 2 Weetabix in a medium-sized bowl or meal prep container.
  2. Pour the almond milk onto the crushed Weetabix. Let the mixture sit for a few minutes. The liquid will to soak into the Weetabix, becoming slightly soft and spongey.
  3. While the Weetabix is soaking, slice ½ of your favourite apple in thin slices. Place the slices in a mug.
  4. Once the Weetabix has soaked up some of the liquid, add the yoghurt on top, spreading gently to create an even layer. You can use anywhere between 100 - 170 grams of yoghurt depending on the size of yoghurt pot you use. If you're spooning yoghurt from a larger container, use a kitchen scale to measure out the right amount.
  5. In the mug with the apple slices, add maple syrup, cinnamon and a pinch of salt. Microwave for 1 - 2 minutes until the apples soften and create a sauce with their liquid.
  6. Pour the apple slices and sauce on top of the yogurt, spreading evenly with a fork.
  7. Cover the overnight Weetabix and place in the fridge to set for at least 4 hours. In the morning, remove the overnight Weetabix from the fridge, serve and enjoy!
