These apple pie overnight oats are blended before sitting for a healthy, puddling-like breakfast that tastes just like an apple crumble.

If you love anything that tastes like apple pie, then you need to give these blended overnight oats a chance. They're smooth, and creamy and taste just like the perfect apple pie or crumble. 

In addition to being delicious, this is also an easy, healthy breakfast. Make it the night before for a fab grab-and-go option or dish it up in your favourite bowl for a luxurious breakfast at home.  

Blending Overnight Oats

It might sound weird, but blending overnight is a game-changer when it comes to texture. 

For many oatmeal haters, the texture is the main complaint. By blending the oats with liquid before they sit overnight, you transform a very oat-y dish into one that seems more like a breakfast pudding.

The best texture to describe the way these oats turn out is "mush" but, oh, is it a glorious mush! 

You can blend your oat mixture with any blender you'd like. A nutribullet would be perfect for this dish, as you're only blending a small single serving.

Hero Ingredient: Nutmeg

While cinnamon is an obvious choice for recreating the taste of apple pie, it's the nutmeg that truly rounds it out. 

Warm, nutty and slightly spicy it's the flavour undertone, if you will, of any good apple pie. You only need a small amount of nutmeg to pull off the apple pie taste, but you can always add more if you're a serious nutmeg fanatic. 
While apple pie is often connected with America, nutmeg is one of the many ingredients that highlight just how diverse this food's history is. Coming from as far away as Indonesia, nutmeg is just one of several non-native foods that make apple the iconic dessert we know today. Combine it with cinnamon from Sri Lanka, apples that originated in central Asia and pastry inspired by the likes of France and the Netherlands, and you've got all the flavours of 'American' apple pie.

Can I make this without nutmeg?

While nutmeg definitely takes this breakfast to another level, feel free to omit it if you don't have any on hand. 

How far ahead do I need to make these blended overnight oats?

It's best to let these set for at least 6 hours in the fridge. You can leave them longer if you'd like but we suggest eating the oats within 2 days of making the recipe.

What kind of apples should I use?

You can use any apple you like, but green (Granny Smith) apples are best for re-creating the taste of apple pie.

Description

These apple pie overnight oats are blended before sitting for a healthy, puddling-like breakfast that tastes just like an apple crumble.


Ingredients

Scale
  • ½ cup oats
  • ½ cup almond milk (or any milk of choice)
  • ¼ cup plain greek yoghurt
  • 1 tablespoon chia seeds
  • 1 tablespoon maple syrup/ sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • ½ apple, diced
  • Granola, for topping

Instructions

  1. Blend everything except the apple and granola until blended smooth.
  2. Pour oat mixture into a small bowl to set. Cover and refrigerate overnight, at least 6 hours.
  3. Once oats are set, remove from fridge and top with chopped apple and a sprinkling of granola. Enjoy!
