These vegetarian empanadas are simply amazing! With a flaky crust and delicious filling, they pair perfectly with a zesty green chimichurri sauce for a fun appetiser or light dinner option.
If you've never tried empanadas, this is your sign!
This flaky, moreish South American pastry is so delicious, and once you try one, you'll be hooked forever.
I made this version vegetarian friendly with a fairly simple bean, corn and cheese filling. While it's delicious on it's own, the flavours really sing when paired with a zesty chimichurri sauce.
It may seem like a huge undertaking to make homemade dough, filling and sauce in one fell swoop, but trust me. It's not that hard, and the end result is SO worth it.
For these vegetarian empanadas, I used a straightforward dough recipe from Laylita's recipes (btw, check out her blog for some delicious looking recipes!)
I will admit that I was a bit nervous to try making the dough on my own, but once you give it a go, you'll realise how easy it really is. For best results, I recommend chilling the dough before shaping the empanadas. This makes the dough easier to handle and fold over the filling without breaking the rounds.
Vegetarain Empanada Filling
The beautiful thing about these empanadas just how customisable they are! I used a relatively simple filling of veggies, beans and cheese, but you could easily swap out the veggies or add more spices as you see fit.
Pepper jack cheese adds a lovely spice to these empanadas, while capsicum and corn bring texture and bite. If you aren't a fan of beans, simply swap out the can of black beans for an extra 1.5 cups of frozen corn kernels.
Chimichurri is a tangy, flavourful sauce often served with grilled meats.
Thanks to it's flavourful punch, it also works perfectly as a dipping sauce to go alongside empanadas. If your spice-averse, start off with half the amount of garlic and work your way up. For a milder sauce, de-seed the chilli before adding it to the food processor or leave it if you prefer a spicier sauce.Print
