This single-serving cinnamon roll is the stuff of dreams.
Unlike a whole batch of cinnamon rolls - which require a lot of preparation - this simple cinnamon bun comes together in minutes. Brown sugar filling and soft dough are baked until golden brown, and topped with a simple frosting. The best part is that this sweet treat comes together in under an hour. Consider your cinnamon roll cravings satisfied!

What you need
Not including the icing, this cinnamon roll only requires 5 basic ingredients. Pretty magical, no?
Dry ingredients:
- All-purpose, self-rising flour: It's important to use self-rising flour to ensure that your dough rises and becomes puffy like the cinnamon roll pictured. We've only baked this using white flour, but please let us know how it turns out if you try wheat flour!
Wet ingredients:
- Coconut yogurt: We used plain coconut yogurt here, as the cinnamon roll is sweet enough. If you use a flavoured yogurt (like vanilla), consider cutting back on the sugar a little - otherwise, it may be sickly sweet. (Feel free to swap for plain yogurt or Greek yogurt if not vegan.)
- Vegan butter: Any vegan butter will work, but a spreadable one will probably make things easier for you. We used Nuttelex buttery for this, and it was the perfect texture/flavour for this recipe. (If you're not vegan, any unsalted butter will work.)
- Brown sugar: Brown sugar is the base of the cinnamon sugar filling. Feel free to swap it out for coconut sugar if you prefer. You can also use white sugar in a pinch, but it won't taste as caramelised.
- Cinnamon: Of course, cinnamon rolls require cinnamon. The more, the merrier!

- Powdered sugar
- Almond milk (or other liquid of choice - if not vegan, you can also use skim/whole milk).
- Cream cheese (optional)

Ingredients
Cinnamon Roll
- ½ cup self-rising flour
- 100 g coconut yogurt (plain)
- 1 teaspoon vegan butter
- 1-3 teaspoons brown sugar
- 2 teaspoons cinnamon
Icing
- 2 Tablespoons powdered sugar
- 1 teaspoon almond milk
- 1-2 teaspoon cream cheese (optional)
Instructions
Cinnamon Roll
- In a medium bowl, mix flour and coconut yogurt. Knead with your hands until everything is well incorporated. If the dough is too sticky, add a little flour in increments until it no longer sticks. The amount of extra flour you will use depends on the yogurt, but we used about 1 Tablespoon extra.
- On a lightly floured surface, flatten the dough into a 20 x 30 cm rectangle, using your hands or a rolling pin.
- If using solid butter, heat it in the microwave until melted but not bubbling. If using spreadable butter, use as-is. Spread vegan butter (spreadable or melted butter) on the rectangle, and top with sugar and ground cinnamon.
- You now have a rectangle of butter and cinnamon-sugar-covered dough on your work surface. Slice the rectangle in half, along the long edge, so you end up with two long, skinny strips. Begin with one strip, and roll keeping the sugar and cinnamon on the inside. When the first strip is rolled up, place it on the second strip, and roll that into the cinnamon roll too.
- Grease a ramekin with butter, oil or cooking spray.
- Place the rolled-up cinnamon roll dough in a ramekin and bake at 180° C for about 30 minutes, until the top begins to brown.
ICING
- When the cinnamon roll is ready, prepare the icing by mixing the powdered sugar and almond milk in a small bowl.
- If you'd like to make cream cheese frosting, mix the cream cheese in now (optional).
- Pour over cinnamon roll and enjoy!

I made this today and I was SO impressed with the taste and texture. I’m wondering what would happen if I added a scoop of vanilla protein powder and more yogurt obviously 🤔 any idea how that might turn out?? Lol

We did test this one with protein powder and more liquid. The result was a flatter, tougher cinnamon roll. It didn't puff up as much as the oven baked one, and was definitely a bit drier. However, it will be highly dependent on which protein powder you use. Let us know if you try - we'd love to hear how it turns out. 🙂
